Easy Appetizers

If you’re hosting dinner or another event at home, the pressure to come up with crowd-pleasing food is high.
I like to keep it simple but not sacrifice flavor.   These two appetizers are quick, easy, nutritious and delicious!

Black Bean Hummus

Black bean hummus

1 can black beans, drained

Juice of 2 lemons

2 Tb. Olive oil

1-2 cloves garlic

pinch salt to taste

Put all ingredients in a blender and blend until smooth, about 1 minute. Refrigerate for at least 1/2 hour before serving for best flavor. Serve with whole wheat pita chips or flatbread crackers and fresh cut vegetables.


Roasted Red Pepper, Pesto & Goat Cheese Toasts

Roasted red pepper, pesto, goat cheese toasts

1 fresh French or multigrain baguette, cut into ½ inch slices

4 ounces goat cheese (log)

1/3 cup fresh basil pesto (homemade or store bought)

1 small jar roasted red peppers

Cut and spread about 1 teaspoon pesto onto each piece of bread.
Then spoon a small amount of cheese on the pesto and top with a strip of pepper.
Bake at 350 degrees until golden brown and cheese looks melted and bread is toasted golden brown.
